Preheat the oven to 175°C. Wash the meat and pat dry. Rub the spices into the meat. Place the meat in an ovenproof dish with the rind facing down and cook in the oven for half an hour. Take the roast out of the oven briefly and cut into the rind. Then finish cooking the meat with the crust side facing up for around 1.5 to 2 hours, depending on the size of the roast. Pour stock or beer over it from time to time. Distribute the peeled and seasoned potatoes around the roast around 40 to 60 minutes before the end of the cooking time, depending on the size.
